Chicken Scarpariello Recipe

Ingredients
  • 1 cube chicken bouillon
  • 1 1/4 lbs skinless, boneless chicken breast halves
  • 2 tbsps shallots, minced
  • 2 tbsps olive oil
  • 2 cloves garlic, minced
  • 1 c water
  • 1 pinch ground black pepper
  • 3 tbsps all-purpose flour
  • 1/4 tsp salt
  • 2 tsps butter
  • 1/2 c white wine
  • 1/2 tsp dried rosemary, crushed

Directions
  • Step #1 Cut chicken breasts into 1 x 3 inch strips, & dredge in flour.
  • Step #2 In 10 inch skillet, heat oil & butter.
  • Step #3 Add chicken.
  • Step #4 Cook, turning every once in awhile, until lightly browned on all sides (3 to 4 mins).
  • Step #5 Using tongs, remove chicken from skillet.
  • Step #6 Set aside & keep warm.
  • Step #7 To same skillet, add shallots & garlic.
  • Step #8 Saute until softened (1 min).
  • Step #9 Add water, wine, broth mix, & seasonings.
  • Step #10 Mix well.
  • Step #11 Cook, stirring frequently, until liquid is reduced by 1/2 (3 to 4 mins).
  • Step #12 Return chicken to skillet, & cook this until sauce is thick & chicken is heated through (2 to 3 mins).
