Ingredients
1 tbsp salt .
water .
3 sprigs fresh rosemary (large sprigs) .
1 kg pork loin, scored & tied
Directions
Step #1 Preheat oven to 240oC.
Step #2 Place pork on a trivet in a baking dish, skin side down.
Step #3 Pour enough water into the baking dish so as not to touch the pork.
Step #4 Add the rosemary to the water.
Step #5 Bake for 20 mins.
Step #6 Turn the pork so that the skin is facing upwards.
Step #7 Sprinkle top the skin with salt.
Step #8 Bake for a further 20 mins the reduce heat to 200oC & cook for a further 20 mins.
Step #9 Allow to rest for 10 mins before slicing.
