Fish Soup/stew With Vegetables Recipe

Ingredients
  • 1 1/2 lbs fish, firm, white & sliced .
  • 1/4 tsp oregano .
  • 1 tbsp oil (optional if bacon has enough fat) .
  • 1 medium green bell pepper, sliced (capsicum) .
  • 1/4 tsp basil .
  • 3-4 dashes Tabasco sauce .
  • 1/4 tsp thyme .
  • 1 c bacon, sliced (or more) .
  • 3 c boiling water .
  • 1 medium red bell pepper, sliced (capsicum) .
  • 3 c tomato juice .
  • 1 c celery, sliced (optional) .
  • 4 medium potatoes, peeled & sliced .
  • 1 medium onion, sliced .
  • 1/2 tsp salt

Directions
  • Step #1 If necessary, thaw and/or skin fish.
  • Step #2 Then dice into 1/2-1 inch pieces.
  • Step #3 Set aside.
  • Step #4 In a dutch oven or very large skillet, fry bacon in heated oil until lightly browned.
  • Step #5 Add onion, bell peppers & celery, & fry until softened.
  • Step #6 Add water, potatoes, seasonings & fish.
  • Step #7 Cook for 15-20 mins or until potatoes are tender.
  • Step #8 If your fish will cook very quickly, you can wait to add it with the tomato juice.
  • Step #9 Add tomato juice & heat through.
