Potato Charlotte Recipe

Ingredients
  • 1/4 c olive oil, divided .
  • 1 (32 oz) bag frozen french fries .
  • 4 medium russet potatoes, peeled & quartered .
  • 1 tsp salt .
  • 1/2 c milk .
  • 6 tbsps butter, divided .
  • 1/4 tsp ground pepper .
  • chives (to garnish)

Directions
  • Step #1 Cook potatoes in boiling water water for 25 mins, or until tender.
  • Step #2 Drain & mash with 2 tbsps butter, 2 tbsps oil, milk, salt & pepper.
  • Step #3 Preheat oven to 400ºF.
  • Step #4 Generously butter 4 large muffin c (or ramekins) with remaining 4 tbsps butter.
  • Step #5 Stand fries vertically & firmly pack to line the sides of each muffin c.
  • Step #6 Trim tops to even lengths.
  • Step #7 (Freeze remainder for another meal.
  • Step #8 ).
  • Step #9 Drizzle fries with remaining olive oil.
  • Step #10 Spoon mashed potatoes into center of each muffin c.
  • Step #11 Bake for 35 mins.
  • Step #12 Invert onto serving plates.
  • Step #13 Garnish with chives.
