Escarole, Sausage, & White Bean Stew Recipe

Ingredients
  • 1 tsp olive oil .
  • 3 c chicken stock .
  • 1 lb bulk Italian sausages, broken into 1 inch pieces (sweet or hot) .
  • 2 tbsps fresh flat-leaf parsley, sliced .
  • 10 large garlic cloves, minced .
  • 1 head escarole, trimmed & cut into 2 inch pieces .
  • kosher salt & pepper .
  • 1 tsp red pepper flakes (to taste) .
  • 2 plum tomatoes, sliced .
  • 4 tbsps unsalted butter .
  • 3 c white beans (cooked or canned any variety but I used great northern) .
  • 1/2 c grated parmesan cheese

Directions
  • Step #1 Heat oil In a large-ish skillet & brown the sausage for about 7-10 mins, stirring constantly.
  • Step #2 Add garlic & red pepper flakes & cook this until the garlic softens.
  • Step #3 Add escarole & cook this until wilted (2 mins).
  • Step #4 Add beans & cook for a min.
  • Step #5 Add the stock & bring to a slow boil.
  • Step #6 Stir in the butter, tomatoes, cheese, & half of the parsley & cook this until heated through & the butter is all melted.
  • Step #7 Spice up with salt & pepper.
