Chocolate Poppy Seed Cake Recipe

Ingredients
  • 2 tsps vanilla extract
  • 4 egg yolks
  • 2 tbsps baking powder
  • cinnamon sugar to taste
  • 4 egg whites
  • 1 c butter
  • 1 tsp baking soda
  • 1 c buttermilk
  • 2 1/2 c all-purpose flour
  • 1/4 c poppy seeds
  • 1 1/4 c white sugar
  • 3/4 c miniature dark chocolate chips

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease & flour a Bundt or angel food cake pan.
  • Step #3 Pour the poppy seeds into the buttermilk in a small bowl.
  • Step #4 Set aside to soak for 15 mins.
  • Step #5 Meanwhile, whip the egg whites to medium peaks; set aside.
  • Step #6 Cream together the butter & sugar in a large bowl until fluffy.
  • Step #7 Add egg yolks one at a time, mixing well between additions.
  • Step #8 Sift the flour, baking soda, & baking powder into the egg mixture; fold carefully to mix.
  • Step #9 Stir in the poppy seeds, milk, & vanilla extract.
  • Step #10 Gently fold in the beaten egg whites until just incorporated.
  • Step #11 Pour half of the batter into the prepared pan.
  • Step #12 Sprinkle top in the chocolate chips & cinnamon sugar.
  • Step #13 Pour the remaining batter over top, & sprinkle with extra cinnamon sugar.
  • Step #14 With a knife, lightly swirl in the chocolate chips & cinnamon sugar so they are dispersed throughout the cake.
  • Step #15 Bake in preheated oven until a toothpick inserted into the center comes out clean, about 1 hr.
  • Step #16 Allow cake to cool completely before removing from the pan.
