Trisha's Easy Fried Rice Recipe

Ingredients
  • 1 medium onion (sliced) .
  • 3 eggs, beaten .
  • 1 c frozen peas (optional) .
  • 3 c cooked rice, cold .
  • 2-4 tbsps soy sauce (to taste) .
  • 2 carrots, sliced (optional) .
  • 1/4 c butter or margarine

Directions
  • Step #1 Melt butter or margarine in non-stick skillet.
  • Step #2 Add onions & carrots (if desired), & fry until onions are transparent & carrots are crisp.
  • Step #3 (About 5 mins).
  • Step #4 Add peas & cook for 1 min more.
  • Step #5 Push veggies to one side & scramble eggs in empty side of skillet.
  • Step #6 Add soy sauce.
  • Step #7 Spoon in rice & mix until well mixed.
  • Step #8 Fry until steamy & serve.
