Curt's New Year's Eve Chili Recipe

Ingredients
  • 1 lb bacon, sliced .
  • 2 lbs ground beef .
  • 4 tbsps Worcestershire sauce .
  • 6 fresh jalapenos, sliced .
  • 2 (12 oz) bottles lager beer .
  • 4 lbs lean beef chuck roast, sliced .
  • 2 (12 oz) cans stewed tomatoes .
  • 5 tbsps dried chipotle powder .
  • 16 oz canned chilies, sliced (Old El Paso or similar) .
  • 6 tbsps ground cumin .
  • 8 whole cloves .
  • 2 tbsps paprika .
  • 1 lb ground turkey .
  • 4 (12 oz) cans kidney beans .
  • 2 tbsps ground black pepper .
  • 3 tbsps chili powder .
  • 2 (6 oz) cans tomato paste .
  • 4 garlic cloves .
  • 2 tbsps Tabasco sauce

Directions
  • Step #1 Fry bacon in a heavy pot.
  • Step #2 Remove & reserve bacon.
  • Step #3 Brown the meat & garlic in the bacon fat.
  • Step #4 For best results, move to a cast iron skillet.
  • Step #5 Saute onions in stock pot until soft.
  • Step #6 Add the meat, chilis, spices, beer, jalapenos, bacon, sauces, tomatoes & paste.
  • Step #7 Simmer for two hrs.
  • Step #8 Add remaining ingredients during cooking, as you check & stir.
  • Step #9 Make sure last ingredients are added with at least one hr of cooking time remaining.
  • Step #10 For best results, allow chili to sit in the refrigerator for 24 hrs to give the spices a chance to intensify.
  • Step #11 It is ok to serve off the stove (suggest a bread bowl!), but it is almost always better as leftovers.
  • Step #12 Caution: freezing & reheating will effect the quality.
  • Step #13 It will still be good, but not the same.
