Salmon Pasta Bake Recipe

Ingredients
  • 1/2 tsp tarragon .
  • 1 1/2-2 c shredded cheddar cheese, can use American .
  • 1 lb rotini pasta .
  • 1/2 c mayonnaise .
  • 16 oz low-fat small-curd cottage cheese .
  • 14 oz boneless cooked salmon, flaked, 2 vaccuum pouches .
  • pepper, to taste .
  • 3 c fresh broccoli, florets .
  • 1/4 tsp paprika .
  • 1 c milk .
  • 1/2 tsp dry mustard .
  • 1 small onion, finely sliced .
  • salt, to taste .
  • 1 c sour cream

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Lightly grease/spray a 13" x 9" casserole dish.
  • Step #3 Cook pasta according to package directions.
  • Step #4 Add the broccoli flowerets during the last 5 mins of boiling.
  • Step #5 Drain the pasta & broccoli & return to the empty pot.
  • Step #6 In a mixer or food processor/blender, mix the cottage cheese, sour cream & mayonnaise until smooth.
  • Step #7 Add the cottage chees/sour cream/mayo mixture to the drained pasta & broccoli.
  • Step #8 Stir in the salmon, onion, milk, cheese, dry mustard, tarragon & paprika; stir well.
  • Step #9 Add extra milk, if needed, to desired moistness.
  • Step #10 Add salt and/or pepper to taste.
  • Step #11 Pour into the prepared casserole dish.
  • Step #12 Sprinkle top a little extra cheese on the top; if desired.
  • Step #13 Bake at 350 for 35-40 mins or until buubly & heated through.
