Olla Podrida Aussie Style Recipe

Ingredients
  • 1/2 lb pork shoulder, cubed .
  • 2 green peppers, sliced .
  • 1/2 lb lean stewing beef .
  • 1 bay leaf .
  • 1 tbsp worcestershire sauce .
  • 2 1/2 c skinned ripe tomatoes .
  • 1 c fresh lima beans .
  • 1 c sliced okra .
  • 1 c sliced carrots .
  • 2 c sliced potatoes .
  • 1/2 c sliced celery .
  • 3 1/2 lbs chickens, cut into pieces .
  • 12 c stock .
  • 2 c corn kernels .
  • 3/4 c sliced onions .
  • sliced hot red pepper

Directions
  • Step #1 Place beef, pork & stock in Dutch oven then bring to a boil, reduce the heat & let simmer for 1 1/2 hrs.
  • Step #2 Add the chicken & bring to a boil again.
  • Step #3 Reduce the heat & let simmer for 1 hr until meat falls off the bone.
  • Step #4 Cool the mixture to remove bones then return to the pot & bring to a boil again.
  • Step #5 When boiling add the tomatoes, potatoes, okra,green peppers, carrots, bay leaf,onions, celery, lima beans, hot pepper, & worcestreshire.
  • Step #6 Reduce to simmer & cook over very low heat for 45 mins or more.
  • Step #7 Stir frequently as it thickens.
  • Step #8 Add the corn & let simmer for 15 mins more or until all vegetables are soft.
  • Step #9 Spice up to taste.
  • Step #10 Serving Suggestion: Garnish with sliced fresh parsley & serve this with crusty bread.
  • Step #11 Best if left overnight & reheated.
