Grilled Chicken Not Necessarily Low-fat Winter Salad Recipe

Ingredients
  • 1 head romaine lettuce, bite-size pieces .
  • 2 tbsps olive oil .
  • 1/4 c butter, melted .
  • 1 tbsp butter .
  • 1/4 c pine nuts, toasted .
  • 4 chicken breast halves, cubed .
  • 1/4 c barbecue sauce .
  • 1/2 c mayonnaise .
  • 1 dash sea salt .
  • 3-4 slices thick-sliced bacon, crumbled .
  • 1/2 head iceberg lettuce, bite-size pieces .
  • 1 large onion, sliced in rings .
  • 1/2 loaf French bread, sliced & cubed (toasted) .
  • 2 tbsps cider vinegar .
  • garlic salt .
  • 8-12 radishes, thinly sliced (or use fresh carrots)

Directions
  • Step #1 Prepare & toss lettuces in large serving bowl; set aside.
  • Step #2 Fry bacon; set aside to cool; then crumble.
  • Step #3 Slice radishes very thin, marinate with vinegar & sea salt; stir & set aside.
  • Step #4 While bacon is frying, slice & cube bread, then toast until golden brown; drizzle with melted butter; sprinkle with garlic salt; set aside.
  • Step #5 When bacon is done, pour off grease, add olive oil & saute' chicken breast cubes; stirring frequently.
  • Step #6 When browned, remove this from pan & set aside to cool.
  • Step #7 Add butter to pan, when melted add onion rings & brown until ALMOST crispy.
  • Step #8 While onions are working, mix mayo & barbecue sauce in a small bowl.
  • Step #9 Pour over chicken cubes, mixing well.
  • Step #10 Add bacon, chicken, radishes, bread cubes, oinions & pine nuts to lettuce in large bowl; toss well.
  • Step #11 Serve with home-made berry compote & fudgy brownies! Option #1: Try carrots or do half-n-half radishes & carrots for lovely color.
  • Step #12 Option #2: Use a different "sauce" to marinate the radishes (soy, red wine or balsamic vinegars, etc.
  • Step #13 ).
  • Step #14 Option #3: Let each diner add each ingredient at the table.
  • Step #15 Option #4: Include spinach or fresh Swiss chard with the greens.
