Dessert Lasagna Recipe

Ingredients
  • 1/2 c toasted sliced almonds .
  • 4 c blackberries, washed .
  • 8 kiwi fruits, peeled .
  • 16 oz lasagna noodles, 12 pieces .
  • 1 c sugar, divided .
  • 4 c strawberries, washed & trimmed, 8 reserved for garnishing .
  • 4 c ricotta cheese .
  • mint sprigs, to garnish

Directions
  • Step #1 Cook the pasta according to package directions.
  • Step #2 Rinse, drain & set aside.
  • Step #3 In a medium bowl, stir this together the ricotta cheese & 1/2 c sugar.
  • Step #4 Set aside.
  • Step #5 In the food processor/blender, puree 4 kiwis with 2 tbsps sugar.
  • Step #6 Transfer the puree to a bowl & set it aside.
  • Step #7 Rinse the processor bowl.
  • Step #8 In the processor, puree half the strawberries with 2 tbsps sugar.
  • Step #9 Strain the puree into a bowl & set it aside.
  • Step #10 Rinse the processor bowl.
  • Step #11 In the processor, puree half the blackberries with 2 tbsps sugar.
  • Step #12 Strain the puree & set it aside.
  • Step #13 Slice the kiwis into 1/4-inch thick rounds.
  • Step #14 Slice the strawberries into 1/8-inch thick pieces.
  • Step #15 Slice the blackberries in half.
  • Step #16 Reserve 1/4 c of each of the purees to use as a garnish when serving.
  • Step #17 To assemble the lasagne, first cover the bottom of a 9-inch-by-13-inch glass baking pan with 3 pieces of pasta.
  • Step #18 Spoon 1/3 of the ricotta on top & spread it evenly.
  • Step #19 Pour the kiwi puree over the cheese & arrange the kiwi slices on the puree.
  • Step #20 Lay on 3 more pieces of pasta & cover with 1/2 the remaining cheese.
  • Step #21 Pour the strawberry puree over the cheese & sprinkle with sliced strawberries.
  • Step #22 Lay on 3 more pieces of pasta & cover with the remaining cheese.
  • Step #23 Pour the blackberries puree over the cheese & sprinkle with blackberries.
  • Step #24 Top with a final layer of pasta.
  • Step #25 Cover up tightly with plastic & put in the fridge overnight.
  • Step #26 Just before serving, sprinkle the lasagne with the remaining 2 tbsps sugar & with the toasted almonds.
  • Step #27 Cut into 8 rectangles & use a spatula to set the pieces on dessert plates.
  • Step #28 Decorate the plates with dots of reserved purees.
  • Step #29 Garnish each piece of lasagne with a strawberry & a sprig of mint.
