Shrimp Spread With Pesto And Mascarpone Recipe

Ingredients
  • Spread .
  • assorted crackers .
  • 2 (8 oz) containers mascarpone cheese, chilled .
  • 1/2 c extra-virgin olive oil .
  • 2 c packed fresh basil leaves .
  • salt .
  • 1/4 c pine nuts .
  • fresh ground black pepper .
  • 1/3 c packed fresh flat leaf parsley .
  • Pesto .
  • 2 garlic cloves, crushed through a press .
  • 1/2 c freshly grated parmesan cheese .
  • 1 1/2 lbs peeled cooked shrimp, coarsely sliced (seasoned to taste)

Directions
  • Step #1 Pesto: add basil, & garlic to a food processor/blender; with the machine running, pine nuts, parsley, slowly add the oil through the feed tube.
  • Step #2 Stir in the Parmesan; season to taste with salt & pepper.
  • Step #3 Spread the mascarpone on a serving platter in a ½-inch thick layer.
  • Step #4 Spread the pesto on top of the mascarpone.
  • Step #5 Sprinkle top the shrimp all over the spread; serve chilled, with the crackers for spreading.
