Slow Cooker Shrimp & Sausage Jambalaya Recipe

Ingredients
  • 1/4 tsp red pepper sauce .
  • 4 celery ribs, sliced (I use outer stalks of celery hearts) .
  • 1/2 tsp dried thyme leaves .
  • 1 (28 oz) can sliced tomatoes, undrained .
  • 1 tbsp parsley flakes .
  • 1 medium green bell pepper, sliced .
  • 2 c smoked sausage, sliced (fully cooked) .
  • 4 c cooked rice .
  • 1 lb large shrimp, peeled & deveined (uncooked) .
  • 1 tbsp garlic, minced .
  • 1 large onion, sliced .
  • 1/2 tsp salt .
  • 1/4 tsp pepper .
  • 1 medium red bell pepper, sliced

Directions
  • Step #1 Mix all ingredients except shrimp & rice In a large-ish slow cooker (aka crockpot).
  • Step #2 Cover up & cook on low setting 7 to 8 hrs (or high for 3 to 4 hrs).
  • Step #3 Stir in shrimp.
  • Step #4 Cover up & cook on high heat about 1/2 hr or until shrimp are pink & firm.
  • Step #5 Serve with rice.
