Tomato Fennel Bisque Recipe

Ingredients
  • 1 large onion, sliced (1 C) .
  • 1 (14 oz) can reduced-fat chicken broth (vegetable if you prefer) .
  • 1 large fennel bulb, coarsely sliced (2 C) .
  • 1/8 tsp pepper .
  • 1/2 tsp savory .
  • 1 lb plum tomatoes, quartered .
  • 1 garlic clove, minced

Directions
  • Step #1 Combine tomatoes, fennel, onion, broth, garlic, savory & pepper In a large-ish saucepan.
  • Step #2 Bring to a boil & reduce heat.
  • Step #3 Simmer, covered 10-15 mins until vegetables are tender.
  • Step #4 Put 1/2 the mixture in a processor & mix until smooth.
  • Step #5 Strain to remove tomato seeds & skins.
  • Step #6 Return to saucepan repeat with remaining mixture.
  • Step #7 Heat through.
  • Step #8 Garnish with parsley or chives.
