Laing - Taro Leaves In Coconut Milk Recipe

Ingredients
  • 1 onion .
  • 2 tbsps vinegar .
  • salt .
  • 150 g dried taro root, leaves washed (we use taro leaves, for some funny reason, Recipezaar insists with taro root) .
  • 2 tbsps crushed garlic .
  • 4 c thick coconut milk .
  • 1 stalk lemongrass, tied in bundle .
  • 2 tbsps sliced ginger .
  • 250 g smoked fish fillet, unboned .
  • 2 c extra coconut milk .
  • 250 g pork, sliced .
  • 2 tbsps chili (siling labuyo or jalapeno) .
  • 250 g shrimp, deveined, skin & heads removed

Directions
  • Step #1 Sautee garlic, onion, lemon grass & ginger in a thick, heavy bottomed wok.
  • Step #2 Add meat & brown, then add shrimp & cook this until pink, add smoked fish (if using).
  • Step #3 Spice up well.
  • Step #4 Pour in the first 4 c of thick coconut milk , & bring to a boil while stirring continuously to avoid curdling.
  • Step #5 When the mixture has thickened, add the taro leaves.
  • Step #6 Stir every once in awhile over med-heat/flame.
  • Step #7 When the liquid is almost dry, add the remaining 2 c of coconut milk, & the chillies.
  • Step #8 Keep stirring to avoid curdling.
  • Step #9 Add vinegar.
  • Step #10 Cook over low heat/flame until coconut milk turned almost into oil.
  • Step #11 Serve hot or at about room temp with rice.
