Mango Tiramisu With Raspberry Sauce Recipe

Ingredients
  • 1 1/2 c raspberries .
  • 3 large egg yolks .
  • 1/2 c dried coconut .
  • 3 tbsps unbleached cane sugar .
  • 10 c ladyfingers, split (about 42 ladyfingers) .
  • 1/3 c granulated sugar .
  • 1 c mascarpone cheese (or cream cheese) .
  • 1 1/2 c whipping cream .
  • 2 tbsps brandy .
  • 1/2 c canned light coconut milk .
  • 2 firm ripe mangoes .
  • 1/2 c powdered sugar

Directions
  • Step #1 Peel mangoes & cut from pit lengthwise into 1/4 inch slices.
  • Step #2 Measure 1 c of the smallest pieces; cover & chill remaining larger slices.
  • Step #3 In a mixer or food processor/blender, whirl the 1 c mangoes & the coconut milk to a smooth puree; pour this into a bowl.
  • Step #4 In the top of a double boiler mix egg yolks, granulated sugar & brandy.
  • Step #5 Whisk over simmering water until water reaches 140 degrees.
  • Step #6 Adjust heat to keep mixture between 140 & 150 degrees; continue to whisk 3 mins.
  • Step #7 Remove from heat & add cheese of choice, stir until very well mixed.
  • Step #8 In a deep bowl with a mixer on high speed, whip cream & powdered sugar until cream holds distinct peaks.
  • Step #9 Add the cheese mixture & fold carefully in to mix.
  • Step #10 Separate lady finger pieces; with a fork dip half of the pieces, 1 at a time, in the mango puree to coat; lift out & drain briefly.
  • Step #11 Arrange flat side down in a single layer in a 9 inch square pan (preferably a Pyrex glass pan).
  • Step #12 Cover up lady fingers in pan with half of the cheese mixture in pan.
  • Step #13 Spread remaining cheese mixture smoothly over top layer of ladyfingers.
  • Step #14 Cover up tiramisu airtight & chill 1 hr.
  • Step #15 In an 8 to 10 inch frying pan over medium high heat stir coconut until golden 4 to 6 mins.
  • Step #16 When cool, cover airtight.
  • Step #17 Meanwhile, rub raspberries through a fine strainer into a bowl; discard seeds.
  • Step #18 Add 3 tbsps cane sugar & stir this to mix.
  • Step #19 Leave in bowl.
  • Step #20 To serve, cut tiramisu into 9 equal squares.
  • Step #21 Use wide spatula to lift out portions & set onto plates.
  • Step #22 Arrange reserved mango portions equally on portions & sprinkle with with the toasted coconut, & spoon raspberry sauce equally on dessert.
