Oh So Rich Baked Macaroni And Cheese Recipe

Ingredients
  • 1 lb colby cheese, shredded .
  • 1 lb elbow macaroni .
  • 3 1/2 c whole milk .
  • 2 c breadcrumbs .
  • 1 garlic clove, minced .
  • 6 tbsps unsalted butter .
  • pepper .
  • salt .
  • 1/4 tsp cayenne pepper .
  • 1 3/4 c low sodium chicken broth .
  • 1 tsp mustard .
  • 2 tbsps unsalted butter, melted .
  • 6 tbsps all-purpose flour .
  • 8 oz extra-sharp cheddar cheese, shredded

Directions
  • Step #1 Preheat oven to 400F degrees Fahrenheit.
  • Step #2 Mix melted butter with the breadcrumbs.
  • Step #3 Cook macaroni in 4 quarts salted boiling water, al dente, then drain.
  • Step #4 Dry pot & melt remaining butter over med-heat/flame.
  • Step #5 Add garlic, mustard, & cayenne pepper.
  • Step #6 Cook approximately 30 seconds.
  • Step #7 Add flour, cook this until golden.
  • Step #8 Slowly add milk & broth, whisking as it is added.
  • Step #9 Simmer & whisk approximately 6 mins.
  • Step #10 Liquid should coat the back of a spoon.
  • Step #11 Remove from heat.
  • Step #12 Whisk in cheese until melted.
  • Step #13 Salt & pepper to taste.
  • Step #14 Add cooked pasta, mix evenly.
  • Step #15 Place mixture in 9x13 pan, cover surface with breadcrumbs.
  • Step #16 Bake 25-30 mins.
  • Step #17 Breadcrumbs will be brown & the edges should be bubbling.
  • Step #18 Cool 10 mins.
