Old Dominion Veal Fricassee With Brown Sauce Recipe

Ingredients
  • salt & pepper, to taste .
  • 1 onion, peeled & sliced .
  • 2 tbsps butter .
  • 2 lbs veal loin .
  • 2 1/2 tbsps flour .
  • 2 stalks celery, sliced .
  • 2 tbsps butter .
  • 1/4 tsp pepper .
  • Brown sauce (use 1 c reserved veal broth) .
  • flour .
  • 1 carrot, peeled & sliced into coins .
  • 1 small onion, peeled & sliced .
  • 1/2 tsp salt

Directions
  • Step #1 Cut the meat into one-inch cubes; place this in a stockpot & add vegetables.
  • Step #2 Cover up with boiling water & let simmer until meat is tender, about 30 mins.
  • Step #3 Melt butter In a large-ish skillet.
  • Step #4 Remove meat from stockpot; season this with salt & pepper, dredge with flour & brown in butter.
  • Step #5 To make brown sauce, melt the butter & add onion; cook this until onion is browned.
  • Step #6 Blend in flour, & continue to brown until flour reaches desired color.
  • Step #7 Add stock slowly; add seasoning & boil for 3 mins, stirring constantly until thickened.
  • Step #8 If onion is not desired, strain the gravy before serving.
