Smoked Salmon Fried Rice Recipe

Ingredients
  • 1 carrot, shredded .
  • 2 stalks celery, sliced .
  • 1 tbsp vegetable oil .
  • 4 oz smoked salmon, sliced into bite sized pieces .
  • soy sauce, to taste .
  • rice wine vinegar, to taste .
  • 2 eggs .
  • 1 onion, sliced .
  • 1 garlic clove, sliced thin .
  • 1 c rice, cooked (I used basmati which added great flavor) .
  • 1 tsp hoisin sauce

Directions
  • Step #1 Heat a large frying pan on high.
  • Step #2 When hot, add the oil.
  • Step #3 Add the onion & celery & a splash of soy sauce & vinegar.
  • Step #4 Cook for about 3 mins.
  • Step #5 Add the carrot & cook for another 2 mins.
  • Step #6 Add the garlic & cook for another min.
  • Step #7 Add the hoisin & stir this to mix.
  • Step #8 Move the vegetables to the perimeter of the pan.
  • Step #9 Add the rice to the center to warm through.
  • Step #10 Lightly splash with soy sauce & vinegar.
  • Step #11 Once warmed, mix the rice into the vegetables & move all to the perimeter of the pan.
  • Step #12 Add the 2 eggs to the center of the pan.
  • Step #13 Scramble.
  • Step #14 Mix with the vegetables & rice.
  • Step #15 Turn off the heat & add the salmon to the pan.
  • Step #16 Taste the mixture & season this with extra soy sauce & vinegar, if needed.
