2 1/2 c dried brown lentils, rinsed & picked over .
2 tbsps chili powder .
2 tbsps packed brown sugar .
1 medium red bell pepper, sliced .
sliced fresh cilantro .
sliced green onions .
salt .
2 tsps dried oregano
Directions
Step #1 Combine the first 15 ingredients in a slow cooker (aka crockpot); cover & cook on LOW, until the lentils are soft, stirring every once in awhile, about 6-8 hrs.
Step #2 During the last hr, add the olive oil & season to taste with salt.
