Healthy Vegan Cookies Recipe

Ingredients
  • 1/4 c raisins .
  • 1/2 tsp baking powder .
  • 1 tbsp barley flour .
  • 2 tbsps chocolate soy milk or almond milk .
  • 1 tsp vanilla extract .
  • 1/2 c barley flour, plus .
  • 1 tsp salt .
  • 1 1/2 tsps blackstrap molasses .
  • 3 tbsps canola oil .
  • 1/4 c pumpkin seeds .
  • 1/4 c pure maple syrup .
  • 1/4 c hemp seeds .
  • 1/4 c spelt flour .
  • 3-4 tbsps non-dairy chocolate chips or carob chips .
  • 2 tbsps flax seed meal .
  • 1/2 c sunflower seeds

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Mix all of the dry ingredients, except the flax meal, in one bowl.
  • Step #3 Mix the flax meal, with the maple syrup & milk.
  • Step #4 Add the rest of the wet ingredients to wet mixture.
  • Step #5 Combine wet & dry mixtures, mix well.
  • Step #6 Form balls from dough & place on greased cookie sheet.
  • Step #7 Bake for 13-14 min, then let cool.
