Beer-braised Beef With Italian Salsa Verde Recipe

Ingredients
  • 1/2 tsp sea salt .
  • 2/3 c fresh dill, sliced .
  • 16 slices Italian bread, toasted .
  • 12 oz Guinness stout .
  • 1/2 tsp sea salt .
  • 1/4 c shallots, sliced .
  • 1/4 tsp pepper .
  • 1/4 tsp black pepper .
  • 1 c low sodium beef broth .
  • 1 tbsp capers, sliced .
  • 1/3 c fresh flat leaf parsley, sliced .
  • 3 tbsps extra virgin olive oil .
  • 2 lbs boneless chuck roast, cut in 3 inch cubes .
  • 1 tsp olive oil .
  • 3 c onions, vertically sliced .
  • 1 c fresh mint, sliced

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 To prepare salsa: Combine 1st 8 ingredients in a small bowl.
  • Step #3 Cover up & put in the fridge.
  • Step #4 To prepare beef: Sprinkle top beef with 1/2 t salt & 1/4 t pepper.
  • Step #5 Heat a Dutch oven over med-high.
  • Step #6 Coat with cooking spray.
  • Step #7 Add beef; cook 5 min or til browned.
  • Step #8 Remove from pan.
  • Step #9 Add 1 t oil & onion to pan.
  • Step #10 Reduce heat & cook 12 min or til golden, stirring every once in awhile.
  • Step #11 Return beef to pan.
  • Step #12 Add broth & beer; bring to a boil.
  • Step #13 Cover up, reduce heat, & let simmer 1 1/2 to 2 hrs or til tender.
  • Step #14 Remove beef from pan; shred with 2 forks & return to pan.
  • Step #15 Spoon 1/4 c beef mixture over each bread slice; top each with 1 1/2 T salsa.
