Ww Layered Mexican Chicken Recipe

Ingredients
  • 8 oz sliced green chilies, two 4-oz cans .
  • 3 c nonfat sour cream .
  • 12 corn tortillas, cut into 2-inch strips .
  • 30 oz canned black beans, rinsed & drained .
  • 1 c salsa .
  • 1/2 tsp black pepper .
  • 2 c shredded reduced-fat monterey jack cheese or Mexican mix cheese .
  • 2 tsps ground cumin .
  • 1 dash olive oil flavored cooking spray .
  • 2 lbs uncooked boneless skinless chicken breasts

Directions
  • Step #1 Preheat oven to 350ºF.
  • Step #2 Coat a lasagna pan with cooking spray.
  • Step #3 Place chicken in medium saucepan & fill with enough cold water just to cover chicken.
  • Step #4 Set pan over high heat & bring to a boil.
  • Step #5 Reduce heat to medium & let simmer until chicken is cooked through, about 10 mins; drain.
  • Step #6 When chicken is cool enough to handle, cut into 1-inch pieces.
  • Step #7 Transfer chicken to a large bowl & add beans, chilies, sour cream, cumin, 1 c of shredded cheese, & pepper; mix well & set aside.
  • Step #8 Arrange half of tortillas in bottom of prepared lasagna pan, overlapping pieces to cover surface.
  • Step #9 Top tortillas with half of chicken mixture, layer with remaining tortillas & then top this with remaining chicken mixture.
  • Step #10 Sprinkle top with remaining c of cheese.
  • Step #11 Bake until filling is bubbly & cheese is melted, about 30 mins.
  • Step #12 Let stand 5 mins before slicing into 12 pieces.
  • Step #13 Serve with salsa on the side.
