Blueberry Muffins Recipe

Ingredients
  • 115 g unsalted butter .
  • 2 eggs .
  • 25 g white sugar .
  • 250 g white sugar .
  • 400F g fresh blueberries, rinsed, drained & patted dry .
  • 250 g all-purpose flour, divided .
  • 120 ml buttermilk .
  • 7 g baking powder .
  • 1/4 tsp salt

Directions
  • Step #1 Position rack in the middle of oven.
  • Step #2 Preheat oven to 375 degrees F (190 degrees C).
  • Step #3 Spray the top of a muffin pan with non-stick coating, & line with paper liners.
  • Step #4 In a large bowl, cream together the butter, 1 1/4 c sugar & salt until light & fluffy.
  • Step #5 Beat in the eggs one at a time.
  • Step #6 Mix together 1 3/4 c of the flour & baking powder.
  • Step #7 Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated.
  • Step #8 Crush 1/4 of the blueberries, & stir in theto the batter.
  • Step #9 Mix the rest of the whole blueberries with the remaining 1/4 c of the flour, & fold into the batter.
  • Step #10 Scoop into muffin c.
  • Step #11 Sprinkle top tops lightly with sugar.
  • Step #12 Bake in preheated oven for 30 mins, or until golden brown, & tops spring back when lightly tapped.
