Cumin Coriander Crusted Salmon Recipe

Ingredients
  • 1/4 tsp ground coriander .
  • Garnish .
  • 1/4 tsp kosher salt .
  • 24 oz salmon fillets .
  • 1/2 tsp cumin .
  • 1 tbsp shallots, finely sliced .
  • 4 lemon wedges .
  • 1-2 tsp olive oil .
  • 1/4 tsp black pepper .
  • 2 tbsps cilantro, finely sliced

Directions
  • Step #1 Combine cilantro shallots, salt & pepper in a small bowl, coriander, oil, cumin, stirring to form a paste.
  • Step #2 (can be made ahead of time).
  • Step #3 Place fish, skin side down, in a shallow baking dish.
  • Step #4 Coat with cilantro mixture.
  • Step #5 Cover up & put in the fridge for 1 hr.
  • Step #6 Preheat oven to 400.
  • Step #7 Arrange fish on the rack of a roasting pan coated with cooking spray.
  • Step #8 Bake at 400F for 10 mins or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Step #9 Serve with lemon wedges.
  • Step #10 Note: The recipe called for 2 tsp oil, but with the fish being as oily as it is, you can get away with 1 tsps.
