Tuscan Chicken Recipe

Ingredients
  • 1 zucchini, sliced .
  • 1 c chickpeas or white kidney beans, rinsed & drained .
  • 1 yellow bell pepper, sliced .
  • 2 tbsps fresh basil or 1 1/2 tsps dried basil .
  • 2 tsps garlic, minced .
  • 1/4 tsp black pepper .
  • 2 tbsps fresh rosemary or 1 1/2 tsps dried rosemary .
  • 2 tbsps fresh oregano or 1 1/2 tsps dried oregano .
  • 1 (22 oz) can pasta sauce .
  • 12 boneless skinless chicken thighs .
  • 3 c mushrooms, sliced .
  • 1/2 c white wine .
  • 1 1/2 c red onions, coarsely sliced .
  • 1 tbsp olive oil .
  • 1/4 c parmesan cheese or romano cheese

Directions
  • Step #1 Heat olive oil In a large-ish skillet over medium high heat.
  • Step #2 Add chicken thighs.
  • Step #3 Cook until chicken is lightly browned, 2 - 3 mins on each side.
  • Step #4 Remove chicken from skillet & keep warm.
  • Step #5 Add onions & garlic to the same skillet.
  • Step #6 Cook & stir until onions begin to soften, about 3 mins.
  • Step #7 Add mushrooms, zucchini & yellow pepper.
  • Step #8 Cook & stir until vegetables are tender crisp, about 6 mins.
  • Step #9 Stir in sliced herbs & cook for 1 more min.
  • Step #10 Add pasta sauce, wine, chick peas & black pepper.
  • Step #11 Bring mixture to a boil.
  • Step #12 Reduce heat to medium low.
  • Step #13 Return chicken pieces to skillet.
  • Step #14 Cover up & let simmer for 20 mins.
  • Step #15 Uncover & cook an extra 10 mins.
  • Step #16 Remove from heat & let this stand uncovered for another 5 mins to cool slightly.
