Vegetable Pilaf Recipe

Ingredients
  • 1 green pepper .
  • 1 onion, sliced .
  • 1 bay leaf .
  • 4 oz zucchini, sliced .
  • 2 c long grain brown rice .
  • 7 tbsps light soy sauce or tamari .
  • 4 oz green beans .
  • 1 pint boiling water .
  • 2 tbsps currants .
  • 4 oz broccoli florets .
  • 1 garlic clove .
  • 1 stalk celery

Directions
  • Step #1 Use non stick spray.
  • Step #2 Cook onion, add garlic & rice & cook for 2 mins.
  • Step #3 Add vegetables, currants, bay leaf & water.
  • Step #4 Bring to a boil, then simmer covered for 30 mins or until rice is cooked.
  • Step #5 Add soy sauce & cook covered for 5 mins.
  • Step #6 remove bay leaf & serve.
