Roasted New Potatoes With Red Onions Recipe

Ingredients
  • 2 lbs small red potatoes, unpeeled .
  • 1 large red onion, coarsely sliced .
  • 2 tbsps olive oil .
  • 3/4 c chicken stock .
  • 2 tbsps fresh parsley, sliced .
  • 1/4 tsp pepper .
  • 1 tsp salt

Directions
  • Step #1 Preheat oven to 425ºF.
  • Step #2 Scrub the potatoes under cold running water & pat dry.
  • Step #3 In a roasting pan, mix potatoes, olive oil, salt & pepper.
  • Step #4 Using a large spoon or by shaking the pan from side to side, coat the potatoes evenly.
  • Step #5 Roast the potatoes for 20 mins.
  • Step #6 Sprinkle top evenly with onion; drizzle evenly with chicken stock.
  • Step #7 Continue roasting 1 1/4 hrs longer, shaking the pan every 10 to 15 mins to rotate the potatoes, until they are brown & crusty & onions are caramelized.
  • Step #8 Transfer to a serving bowl & garnish with parsley.
  • Step #9 Serve as soon as possible.
