Ingredients
2 1/4 c bread flour (if using all-purpose add 2 Tablespoons of Vital Wheat Gluten (box says 4 tsps per loaf) .
1 1/2 tsps yeast (bread machine) .
3/4 c water (can use juice, milk) .
3 tbsps sugar .
1 egg (beaten with liquid mix) .
1/2 tsp salt .
1 tbsp butter
Directions
Step #1 Place water (liquid component) with egg, butter, sugar & salt in a small sauce pan & bring up to heat.
Step #2 Do not completely melt the butter or you will scramble the egg.
Step #3 Pour into bottom of machine & add gluten.
Step #4 do not stir or mix! Add flour right on top.
Step #5 Now it's time to add the yeast.
Step #6 Now I just dump it on the top.
Step #7 The proper method is to make a well, place the yeast in that well & then cover the yeast with flour.
Step #8 Since this has egg in it you can't use the timer so the placement of the yeast doesn't matter.
Step #9 Set to sandwich (two rises) & your done.
Step #10 You need to test your machine for done-ness.
Step #11 In my machine this recipe is done 19 mins earlier than the cycle.
Step #12 Remove when done & let set on a rack for 20-30 mins.
Step #13 Slice & eat.
Step #14 You can add 2-3 T of different spices for different bread flavors.
Step #15 For nice muffin rolls- set the machine to dough & remove after it is done kneading.
Step #16 cut dough in half & then half those pieces until you end up with 2" pieces.
Step #17 Flatten slightly & place this into lightly sprayed muffin tins.
Step #18 Let rise until doubled in size & bake on 350 until golden brown.
