Sylet Red Chicken Curry Recipe

Ingredients
  • 2 lbs skinless chicken pieces .
  • 1 chicken stock cube .
  • 2 large tomatoes .
  • 1 tsp white vinegar .
  • 3 tsps coriander powder .
  • 6 garlic cloves, crushed .
  • 1 inch square fresh ginger .
  • 1/2 tsp turmeric powder .
  • 1 tbsp tomato puree .
  • 1 tsp cumin seeds .
  • 1 tsp garam masala .
  • 4 tbsps oil .
  • 4 tsps chili powder .
  • 1 pinch salt .
  • 2 large onions, sliced

Directions
  • Step #1 Puree the garlic, cumin, tomatoes, ginger, with the tomato puree in a mixer.
  • Step #2 In a large pan heat the oil & fry the onions till soft.
  • Step #3 Add the chilli powder & 1/4 c of water, stir & bring to the boil.
  • Step #4 Add the coriander & tumeric cook for 1 min, add the garam masala, cook 1 min Add a little water if the paste becomes too thick.
  • Step #5 Add the chicken & a little salt, fry for 3 mins.
  • Step #6 Add the tomato mixture, cook for 2 mins.
  • Step #7 Add 3 c of water & the stock cube, cook till meat falls from the bones.
  • Step #8 Add the vinegar, stir & serve.
