Potato-yam Pancakes Recipe

Ingredients
  • 2 tbsps flour .
  • 2 large eggs .
  • 1 garnet yam .
  • 1 pinch salt .
  • canola oil, for frying .
  • 1 onion .
  • 1 unpeeled russet potato .
  • 1 pinch pepper

Directions
  • Step #1 Quarter onion.
  • Step #2 Dice potatoes.
  • Step #3 In a food processor/blender fitted with a metal blade, puree onion & eggs together until smooth & fluffy.
  • Step #4 Add both potatoes & pulse until the mixture is finely sliced but still retains some texture.
  • Step #5 Add the salt, pepper & flour, & quickly process to mix.
  • Step #6 Do not over-process.
  • Step #7 Pour batter into a medium bowl.
  • Step #8 Cover up bowl with plastic wrap & let the batter sit for 15 mins.
  • Step #9 In a large nonstick skillet, heat 1/2 inch of oil over medium-high heat.
  • Step #10 Pour 1 tbsp batter into the skillet to test the oil.
  • Step #11 If it is hot enough, the pancake will begin to sizzle & brown.
  • Step #12 Spoon batter into skillet, about 1 tbsp per pancake, leaving a little room between each one.
  • Step #13 Flatten them with the back of a spoon & use the spatula to round the sides, if necessary.
  • Step #14 Fry pancakes for 2 to 3 mins, or until they are golden brown on the bottom.
  • Step #15 Turn them & brown the other side, about 2 more mins.
  • Step #16 Transfer the pancakes to a baking sheet lined with 2 layers of paper towels.
  • Step #17 To serve now, place the pancakes on a platter & serve as soon as possible.
  • Step #18 If making ahead, keep warm in a preheated 200-degree oven for up to 30 mins.
