Seafood Lasagna Recipe

Ingredients
  • 1/2 c butter (or margarine) .
  • 1 lb shrimp, small, uncooked (peeled & deveined) .
  • 1/2 c flour .
  • 1/2 c chicken broth .
  • 9 lasagna noodles, cooked, drained .
  • 2 tbsps butter (or margarine) .
  • 1 (8 oz) bottle clam juice .
  • 1 lb bay scallops .
  • 1 (8 oz) package imitation crabmeat (or real if preferred) .
  • 1/4 tsp white pepper (divided) .
  • 1 1/2 c milk .
  • 2 tbsps vegetable oil .
  • 1/4 c green onions (sliced) .
  • 1 c whipping cream .
  • 1/2 c parmesan cheese, shredded (divided)

Directions
  • Step #1 In a large skillet, sauté onion in oil & 2 Tbs.
  • Step #2 butter until tender.
  • Step #3 Stir in broth & clam juice, bring to a boil.
  • Step #4 Add scallops, shrimp, & crab & 1/8 tsps white pepper.
  • Step #5 Return to boil.
  • Step #6 Reduce heat, simmer uncovered, for 4-5min or until shrimp turn pink & scallops are firm & opaque-stirring carefully.
  • Step #7 Drain-reserving cooking liquid: set seafood mixture aside.
  • Step #8 In a saucepan, melt remaining butter; stir in the flour until smooth.
  • Step #9 Combine milk & reserved cooking liquid; slowly add to the saucepan.
  • Step #10 Add remaining pepper.
  • Step #11 Bring to a boil, cook & stir for 2 min or until thickened.
  • Step #12 Remove from heat, stir in the cream & ¼ c Parmesan cheese.
  • Step #13 Stir ¾ c of white sauce into seafood mixture.
  • Step #14 Spread ½ c of white sauce in a greased 13 x 9 x 2” baking pan.
  • Step #15 Top with 3 noodles; spread with ½ of seafood mixture & 1-1/4 c white sauce.
  • Step #16 Repeat layers.
  • Step #17 Top with remaining noodles, sauce & Parmesan cheese.
  • Step #18 Bake, uncovered @ 350 degrees for 35-40 min or until golden brown.
  • Step #19 Let stand 15min before serving.
  • Step #20 Serves 12.
