Coconut Shrimp Recipe

Ingredients
  • 1/2 c cornstarch .
  • 1/2 c pina colada nonalcoholic drink mix .
  • 1/2 lb large shrimp (butterfly the shrimp) .
  • 1 tbsp powdered sugar .
  • 1 c plain breadcrumbs .
  • 3 tbsps captain morgan spiced rum .
  • 1 c sweetened flaked coconut .
  • 1/4 c cornstarch (mix with coconut & bread crumbs)

Directions
  • Step #1 Mix bread crumbs, 1/4 c cornstarch, & coconut in a deep bowl & set aside.
  • Step #2 Combine Pina Colada mix, powder sugar & Rum in a small mixing bowl & set aside.
  • Step #3 Place 1/2 c corn starch in a separate bowl.
  • Step #4 Heat oil for deep frying.
  • Step #5 Oil is ready for frying shrimp with it reaches 375 degrees.
  • Step #6 Coat shrimp first in corn starch, then into the Pina Colada mix, then dust shrimp in bread crumbs, coconut mixture.
  • Step #7 Second coating place back into Pina Colada mix, then again into coconut, & then the bread crumb mixture.
  • Step #8 Place prepared shrimp carefully into hot oil.
  • Step #9 Fry until golden brown, remove this from fryer & drain.
