Chicken Thigh Fricassee With Mushrooms And Rosemary Recipe

Ingredients
  • 4 tbsps olive oil, divided
  • 1/4 tsp crushed red pepper flakes
  • 12 Nicoise olives
  • 12 cherry tomatoes
  • 1 lb chicken thighs
  • salt & freshly ground black pepper to taste
  • 4 cloves garlic, peeled & halved
  • 3/4 c dry white wine
  • 2 tbsps fresh rosemary, sliced
  • 5 oz fresh mushrooms, sliced

Directions
  • Step #1 Heat 2 tbsps olive oil in a large skillet over med-heat/flame.
  • Step #2 Stir in mushrooms, & cook this until soft.
  • Step #3 Remove to a plate.
  • Step #4 Wipe out skillet, & heat 2 tbsps olive oil over medium-high heat.
  • Step #5 Place garlic, rosemary, & chicken thighs in hot oil.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Cook, turning chicken, until chicken & garlic are well browned.
  • Step #8 Return mushrooms to skillet, & sprinkle red pepper flakes over chicken.
  • Step #9 Pour in white wine, scraping the bottom of the skillet with a wooden spoon.
  • Step #10 Cook about 3 mins.
  • Step #11 Reduce heat to low; cover, & let simmer carefully for 1 hr.
  • Step #12 Sprinkle top tomatoes & olives over chicken, return cover, & cook about 5 mins more.
