My Favorite Souse Recipe

Ingredients
  • 1 tsp salt .
  • 1 1/2 c fresh squeezed lime juice .
  • 2 cucumbers, peeled & sliced .
  • watercress, for garnish .
  • 1 scotch bonnet pepper or habanero pepper, sliced (Seeds & stem removed) .
  • 3-4 c water .
  • 4 lbs pig's feet (pork stew meat can be used as a substitute) .
  • 4 garlic cloves, minced .
  • 1/2 tsp fresh ground black pepper .
  • 1 bunch parsley, sliced .
  • 1 onion, thinly sliced

Directions
  • Step #1 Place the cut up meat In a large-ish pot.
  • Step #2 Cover up with salted water.
  • Step #3 Cook over med-heat/flame until the meat is tender (about 2 hrs).
  • Step #4 Remove the meat from the water, rinse in cold water, & drain.
  • Step #5 In a large bowl mix the cooked meat, pepper, lime juice, salt, garlic, cucumbers, onion, water, parsley & ground pepper.
  • Step #6 Marinate for at least 6 hrs.
  • Step #7 Serve cold.
