Crab Cakes With A Creamy Grainy Mustard Sauce Recipe

Ingredients
  • 1/2 small onion, finely sliced .
  • 1/2 small red bell pepper, finely sliced .
  • 1 tsp hot sauce .
  • 4 tbsps extra virgin olive oil .
  • 1/2 c mayonnaise .
  • 1 garlic clove, sliced .
  • 2 tbsps butter .
  • 3/4 c chicken stock .
  • 1/4 c fresh flat-leaf parsley, sliced .
  • 1/4 c heavy cream .
  • 2 tbsps grainy mustard .
  • 4 scallions, finely sliced .
  • black pepper .
  • 1 lb fresh lump crabmeat .
  • salt .
  • 7 slices white bread

Directions
  • Step #1 Preheat a small saute pan over med-high heat with 1 tbsp olive oil; add in onions & garlic; season this with salt & pepper.
  • Step #2 Cook, stirring frequently, for 3-4 mins.
  • Step #3 Add in the grainy mustard, & cream; bring to a simmer; cook this until thick, chicken stock, 2-3 mins.
  • Step #4 Turn the sauce off & reheat it when you’re ready to serve (if it thickens up too much, add a splash more of chicken stock to loosen it up).
  • Step #5 Place the bread in a food processor/blender; use the pulse button to break it up, then process & make fine bread crumbs.
  • Step #6 In a bowl, salt, & pepper; carefully run you fingers through the crab meat, mix the mayo, hot sauce, parsley, scallions, red bell peppers, feeling for any shells or cartilage while trying not to break up the meat too much.
  • Step #7 Add the crab meat to the mayonnaise mixture with ¼ of the bread crumbs & carefully fold the mixture to mix.
  • Step #8 Place the remaining bread crumbs on a plate; divide the crab mixture into 4 equal portions.
  • Step #9 Transfer the 4 crab portions to the plate with the bread crumbs & coat each one, carefully pressing to adhere the bread crumbs & forming 1- to 1 ½-inch thick cakes.
  • Step #10 Preheat a nonstick skillet over med-heat/flame with the remaining olive oil & the butter.
  • Step #11 Once the butter melts, add the crab cakes & cook for about 4 mins on each side or until they are golden brown & heated through.
  • Step #12 Divide the sauce between 2 plates, top this with the crab cakes, & serve.
