Timothy's White Chili Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 6 c chicken broth .
  • 1/4 tsp cayenne pepper .
  • 1 lb large white beans (sorted, rinsed) .
  • 2 (4 oz) cans mild green chilies, sliced .
  • 1 tbsp oil .
  • 1 1/2 tsps oregano .
  • 4 c sliced cooked chicken breasts .
  • 1/4 tsp ground cloves .
  • 2 medium onions, sliced .
  • 2 tsps ground cumin

Directions
  • Step #1 Combine beans, broth, garlic, & half the onions In a large-ish soup pot.
  • Step #2 Bring to a boil.
  • Step #3 Reduce heat, simmer until beans are soft (2 hrs or more), adding more broth if necessary.
  • Step #4 In a skillet, saute remaining onions in oil until tender.
  • Step #5 Add chiles & seasonings; mix thoroughly.
  • Step #6 Add to bean mixture.
  • Step #7 Add chicken & let simmer 1 hr.
  • Step #8 Serve topped with grated Monterey Jack cheese, salsa, & sour cream.
  • Step #9 I also like to serve tortilla chips on the side.
