Lavender Flan Recipe

Ingredients
  • 1 pint fresh strawberries, hulled & quartered .
  • 2 tbsps water .
  • 1 tbsp sliced fresh lavender, crumbled or 1 1/2 tsps dried lavender, crumbled .
  • Caramel .
  • 2 c whole milk .
  • 2 egg yolks .
  • Garnish .
  • 3-4 drops fresh lemon juice .
  • 6 fresh mint leaves .
  • 3 eggs .
  • 2/3 c sugar .
  • 1/2 c sugar .
  • Custard

Directions
  • Step #1 To make the custard: Combine the milk, 1/4 c of the sugar, & the lavender in a medium saucepan & bring to a boil over medium-high heat.
  • Step #2 Remove from heat & let sit for at least 30 mins.
  • Step #3 Combine the eggs, egg yolks, & remaining 1/4 c sugar in a medium bowl & beat until light & frothy.
  • Step #4 Gradually add half the boiled milk mixture, stirring constantly.
  • Step #5 Gradually add the yolk mixture back to the milk mixture in the pan, stirring constantly.
  • Step #6 Strain the custard into a clean container & let cool to about room temp.
  • Step #7 Cover up & put in the fridge overnight.
  • Step #8 (This may be done 1 day in advance.
  • Step #9 ).
  • Step #10 To make the caramel: lightly oil six 4-oz ramekins or custard c.
  • Step #11 Combine all the caramel ingredients in a small pan.
  • Step #12 Cook over med-heat/flame, stirring every once in awhile, until the sugar turns a light amber color, about 10 to 12 mins.
  • Step #13 Pour an 1/8-inch layer of caramel into the bottom of each prepared ramekin or custard c.
  • Step #14 To make flans: Preheat the oven to 325°F Place the ramekins or c in a deep baking pan.
  • Step #15 Carefully pour the custard into the ramekins or c.
  • Step #16 Add warm water halfway up the sides of the ramekins or c.
  • Step #17 Bake for 25 to 30 mins, or until the edges have set & a nickel-sized spot in the center jiggles slightly when a flan is shaken.
  • Step #18 Remove the baking pan from the oven & remove the flans from the baking pan.
  • Step #19 Let cool completely.
  • Step #20 Place in the fridge at least 6 hrs or over night.
  • Step #21 Tip each flan out of the ramekin or c onto a dessert plate & garnish with strawberries & mint.
