Ingredients
1/4 tsp salt .
tarragon .
3 c rice, cooked .
1/8 tsp ground black pepper .
4 c milk .
3 tbsps flour .
1 tbsp cooking oil .
1 small bulb of garlic, peeled (8 cloves) .
3 medium leeks, thinly sliced or 1 large onion, thinly sliced .
1 1/2-2 lbs boneless pork loin roast (single loin)
Directions
Step #1 Trim fat from pork roast.
Step #2 In an oven-safe pot, cook leeks & whole garlic cloves in hot oil until leeks are tender & begin to brown.
Step #3 Push leeks & garlic to the side of pot.
Step #4 Sprinkle top tarragon on roast & add roast to pan.
Step #5 Brown well on all sides.
Step #6 Add the milk, salt & pepper to pot.
Step #7 Bake, covered, in a 400F degree F oven for about 2 hrs, or until tender.
Step #8 Transfer roast to a warm serving platter.
Step #9 For sauce, strain pan juices & skim off any fat.
Step #10 Return the cooking liquid to the pot.
Step #11 Gradually stir cold water into flour.
Step #12 Stir into cooking liquid.
Step #13 Cook & stir until thickened & bubbly.
Step #14 Cook & stir 1 min more.
Step #15 To serve, slice meat & serve this with rice & sauce.
Step #16 Also great served with pasta.
