Braised Pork In Milk Recipe

Ingredients
  • 1/4 tsp salt .
  • tarragon .
  • 3 c rice, cooked .
  • 1/8 tsp ground black pepper .
  • 4 c milk .
  • 3 tbsps flour .
  • 1 tbsp cooking oil .
  • 1 small bulb of garlic, peeled (8 cloves) .
  • 3 medium leeks, thinly sliced or 1 large onion, thinly sliced .
  • 1 1/2-2 lbs boneless pork loin roast (single loin)

Directions
  • Step #1 Trim fat from pork roast.
  • Step #2 In an oven-safe pot, cook leeks & whole garlic cloves in hot oil until leeks are tender & begin to brown.
  • Step #3 Push leeks & garlic to the side of pot.
  • Step #4 Sprinkle top tarragon on roast & add roast to pan.
  • Step #5 Brown well on all sides.
  • Step #6 Add the milk, salt & pepper to pot.
  • Step #7 Bake, covered, in a 400F degree F oven for about 2 hrs, or until tender.
  • Step #8 Transfer roast to a warm serving platter.
  • Step #9 For sauce, strain pan juices & skim off any fat.
  • Step #10 Return the cooking liquid to the pot.
  • Step #11 Gradually stir cold water into flour.
  • Step #12 Stir into cooking liquid.
  • Step #13 Cook & stir until thickened & bubbly.
  • Step #14 Cook & stir 1 min more.
  • Step #15 To serve, slice meat & serve this with rice & sauce.
  • Step #16 Also great served with pasta.
