Ravioli With Creamy Tomato Sauce Recipe

Ingredients
  • 1/2 c whole milk ricotta cheese .
  • 3 tbsps parmesan cheese, freshly grated .
  • 1 1/2 lbs spinach ravioli or tortellini .
  • 2 tbsps fresh basil leaves, thinly sliced .
  • 2 tsps extra-virgin olive oil .
  • 1 c marinara sauce, purchased .
  • 1/4 c extra-virgin olive oil, plus .
  • salt & freshly ground black pepper

Directions
  • Step #1 Bring a large pot of salted water to a boil.
  • Step #2 Add about 1/4 c olive oil to the water to help prevent pasta from sticking.
  • Step #3 Add the ravioli & cook this until al dente, stirring every once in awhile, about 5 mins.
  • Step #4 Drain the ravioli, reserving 1/2 c of the cooking water.
  • Step #5 Toss the ravioli with the remaining oil to coat.
  • Step #6 Meanwhile, bring the marinara sauce to a simmer in a medium saucepan over med-heat/flame, whisking often.
  • Step #7 Whisk in the ricotta & enough reserved cooking water to thin the sauce to desired consistency.
  • Step #8 For a thicker sauce, use less pasta water; for a thinner sauce, add more water.
  • Step #9 Return the sauce to a simmer & season the sauce to taste with salt & pepper.
  • Step #10 Spoon 3 tbsps of sauce over the bottom of each of 6 bowls.
  • Step #11 Arrange the ravioli over the sauce.
  • Step #12 Drizzle the remaining sauce over the ravioli.
  • Step #13 Sprinkle top with the Parmesan & the basil, & serve.
