Crushed Heirloom Potatoes Recipe

Ingredients
  • 1/4 c extra virgin olive oil .
  • 1/2 c pecans, toasted, sliced .
  • 2 lbs unpeeled whole heirloom potatoes .
  • 2 c packed baby arugula .
  • salt & pepper .
  • 3 oz crumbled gorgonzola or blue cheese

Directions
  • Step #1 Boil potatos until they are just tender, 20-40 mins (depending on variety).
  • Step #2 Drain.
  • Step #3 Return them to pot.
  • Step #4 Using a large wooden spoon, coarsely crush potatoes in pot.
  • Step #5 Stir in cheese, nuts, oil & arugula & toss to mix.
  • Step #6 Salt & pepper to taste.
