1 large cooking apple, peeled, cored & finely sliced .
8 pork sausages .
1/2 tsp ground cinnamon .
300F ml milk .
1 tbsp caster sugar .
sunflower oil, for cooking
Directions
Step #1 Pre heat a griddle pan over a medium heat until very hot.
Step #2 Add the saudsages & cook for 10-15 mins until cooked through & lightly charred.
Step #3 Meanwhile to make the pancakes heat a large pan.
Step #4 Sift the flour, baking powder, & cinnamon into a bowl.
Step #5 In a separate bowl, using a wooden spoon, cream together 15g / ½ oz of the butter & the sugar until light & fluffy.
Step #6 Beat in the eggs, adding a little flour to stop the mixture from curdling, then fold in the rest of the flour mixture & stir in the the sliced apple.
Step #7 Gradually add the milk, stirring until smooth after each addition until you have a batter.
Step #8 Add a little of the oil & remaining butter to the preheated pan, once melted ladle in spoonfuls of the pancake batter, allowing them to spread out max 3 inces diameter.
Step #9 Reduce heat & cook for 2-3 mins until small bubbles appear on the surface.
Step #10 Turn pancakes & cook for another 1-2 mins until golden, making 12 pancakes.
Step #11 Arrange three pancakes on each plate & serve this with the sausages.
