3/4 c butter (butter needs to be soft, but chilled) .

Step #1 Step 1: Make filling for meat pies:.
Step #2 Sautee meat, procuitto, potatoes, shallots & garlic in olive oil over a skillet until light brown.
Step #3 Put in butter & pour in wine & let cook down.
Step #4 Once your meat is brown & the wine is cooked out salt & pepper the meat to taste & then turn off the fire & put in the basil.
Step #5 Transfer filling into a bowl & set aside.
Step #6 Step 2: Make crust:.
Step #7 Measure flour & salt into bowl.
Step #8 Cut in butter thoroughly.
Step #9 Sprinkle top in water 1 tbsp at a time, mixing until all flour is moistened & dough almost cleans the side of the bowl (1 – 2 tsps can be added if needed).
Step #10 Step 3: Put together your ingredients:.
Step #11 Preheat oven to 375 degrees.
Step #12 Form dough into a ball & place on a flat lightly floured surface.
Step #13 Flatten & roll out dough.
Step #14 Cut out 5 x 3 inch oval shaped pieces of dough until there is little left.
Step #15 (You can cut them smaller than 5 x 3 if making hors d’ouvres).
Step #16 Place two table spoons of meat pie filling towards the bottom center on each individual pie crust.
Step #17 Take the top edges & fold them over the meat & use a fork to pinch the edges together.
Step #18 Be sure to completely seal the pie shell all the way around the loose edges.
Step #19 In the center of each pie poke it with a knife twice.
Step #20 Brush olive oil on each pie & place them on a well oiled baking sheet.
Step #21 Place in preheated oven for 15-20 mins until they are golden brown.
