Yu Shiang Pork Recipe

Ingredients
  • 3/4 lb boneless pork loin, cut into matchstick pieces .
  • 3 tbsps chicken stock (or water) .
  • 1 tsp cornstarch .
  • 4 c cooked rice .
  • 2/3 c bamboo shoots, sliced into matchstick pieces .
  • 1 tbsp vinegar .
  • 1 tbsp sugar .
  • 2 garlic cloves, minced .
  • 10 green onions, cut in 2-inch lengths .
  • 1 tbsp dry sherry .
  • 1 tbsp dry sherry .
  • 1 tsp fresh ginger, minced .
  • PORK .
  • SAUCE .
  • 2 tsps cornstarch .
  • 3-4 dried hot chili peppers .
  • 1 dash pepper .
  • 2 tbsps vegetable oil, divided .
  • 2 tbsps low sodium soy sauce

Directions
  • Step #1 FOR SAUCE: In a medium bowl, soy sauce, sherry, vinegar, mix together sugar, chicken stock & cornstarch.
  • Step #2 Stir until sugar & cornstarch disolve.
  • Step #3 Set aside.
  • Step #4 FOR PORK: In a large bowl, mix cornstarch, pepper & sherry.
  • Step #5 Add pork; stir this to coat.
  • Step #6 Let sit for 15 mins.
  • Step #7 Heat wok or large skillet over high heat.
  • Step #8 When pan is hot, add 1 tbsp of oil.
  • Step #9 When oil is hot, add garlic, ginger & chilies.
  • Step #10 Add pork & stir-fry until lightly browned (about 4 mins).
  • Step #11 Remove from pan & wipe pan clean with paper towels.
  • Step #12 Heat remaining oil in pan.
  • Step #13 Add bamboo shoots & onions & stir-fry for 1 min.
  • Step #14 Return pork mixture to pan.
  • Step #15 Stir in reserved sauce & cook, stirring, until sauce boils & thickens.
  • Step #16 Serve over your rice of choice.
