Grilled Pork And Vegetable Pitas
Ingredients
3/4 lb boneless pork loin, cut into matchstick pieces .
3 tbsps chicken stock (or water) .
1 tsp cornstarch .
4 c cooked rice .
2/3 c bamboo shoots, sliced into matchstick pieces .
1 tbsp vinegar .
1 tbsp sugar .
2 garlic cloves, minced .
10 green onions, cut in 2-inch lengths .
1 tbsp dry sherry .
1 tbsp dry sherry .
1 tsp fresh ginger, minced .
PORK .
SAUCE .
2 tsps cornstarch .
3-4 dried hot chili peppers .
1 dash pepper .
2 tbsps vegetable oil, divided .
2 tbsps low sodium soy sauce
Directions
Step #1 FOR SAUCE: In a medium bowl, soy sauce, sherry, vinegar, mix together sugar, chicken stock & cornstarch.
Step #2 Stir until sugar & cornstarch disolve.
Step #3 Set aside.
Step #4 FOR PORK: In a large bowl, mix cornstarch, pepper & sherry.
Step #5 Add pork; stir this to coat.
Step #6 Let sit for 15 mins.
Step #7 Heat wok or large skillet over high heat.
Step #8 When pan is hot, add 1 tbsp of oil.
Step #9 When oil is hot, add garlic, ginger & chilies.
Step #10 Add pork & stir-fry until lightly browned (about 4 mins).
Step #11 Remove from pan & wipe pan clean with paper towels.
Step #12 Heat remaining oil in pan.
Step #13 Add bamboo shoots & onions & stir-fry for 1 min.
Step #14 Return pork mixture to pan.
Step #15 Stir in reserved sauce & cook, stirring, until sauce boils & thickens.
Step #16 Serve over your rice of choice.
