Crispy Eggplant (aubergine) Fingers Recipe

Ingredients
  • 1/2 tsp salt .
  • 2/3 c fine dry breadcrumbs .
  • 1/2 tsp celery salt .
  • 2 tbsps milk .
  • 2 eggs .
  • 1/4 tsp pepper .
  • 1/3 c grated parmesan cheese .
  • vegetable oil .
  • 1 medium eggplant

Directions
  • Step #1 Peel eggplant; cut into finger-size strips.
  • Step #2 Combine next 5 ingredients; stir well.
  • Step #3 Combine eggs & milk; stir well.
  • Step #4 Roll eggplant strips in breadcrumb mixture; dip in egg mixture, & roll again in breadcrumb mixture.
  • Step #5 Fry in hot oil (375F) until golden brown.
  • Step #6 Drain on paper towels.
