Leg Of Lamb For The Slow Cooker / Crock Pot Recipe

Ingredients
  • 2 tbsps fresh rosemary, off stem & choppped or dried rosemary .
  • 5 garlic cloves, sliced .
  • salt & pepper, to taste .
  • 2 tbsps olive oil, enough to rub leg of lamb .
  • 1 (2 1/2 kg) leg of lamb .
  • 4 c vegetable stock, liquid (salt reduced) .
  • 1/4 c reduced sodium soy sauce

Directions
  • Step #1 Make small incisions in leg of lamb & insert the slices of garlic in each incision.
  • Step #2 Rub olive oil, rosemary around the lamb & season this with salt & pepper.
  • Step #3 In large non-stick pan, brown leg of lamb.
  • Step #4 While the lamb is browning, you can prepare the slow cooker (aka crockpot)/Crock Pot.
  • Step #5 Pour the stock & soy sauce into the slow cooker (aka crockpot)/Crock Pot.
  • Step #6 When the lamb is finishing browning add it to the Slow Cooker/Crock Pot.
  • Step #7 Cover up & cook for 8-10 hrs on low setting.
  • Step #8 Remove from slow cooker (aka crockpot)/Crock Pot & let rest 15 to 20 mins before slicing.
