Ingredients
1/4 tsp salt .
1/4 tsp red pepper flakes .
1 (15 oz) container part-skim ricotta cheese .
1 lb ziti pasta or rigatoni pasta .
2 egg whites .
1/8 tsp ground black pepper .
1 large onion, sliced .
3 garlic cloves, minced .
1 (28 oz) can crushed tomatoes in puree .
1 tsp vegetable oil .
1/3 c grated parmesan cheese .
2 tsps dried Italian seasoning .
2/3 c shredded part-skim mozzarella cheese .
2 sweet red peppers or zucchini, sliced
Directions
Step #1 Preheat the oven to 325°F.
Step #2 Prepare the pasta according to the package directions.
Step #3 Drain & transfer to a 3-quart casserole dish.
Step #4 Meanwhile, heat the oil In a large-ish skillet over medium-low heat.
Step #5 Add the onion & garlic & cook for 5 mins, or until softened.
Step #6 Add the zucchini or sweet red pepper, red-pepper flakes, Italian seasoning, tomatoes, salt & pepper.
Step #7 Cover up & cook, stirring every once in awhile, for 10 mins or until the vegetables are soft.
Step #8 Combine the egg whites & the ricotta in a medium bowl, stir this to mix well, & spoon over the pasta.
Step #9 Top with the vegetable mixture & sprinkle with the mozzarella & Parmesan.
Step #10 Bake for 45 mins, until the top is golden brown.
