Zesty Ziti Bake Recipe

Ingredients
  • 1/4 tsp salt .
  • 1/4 tsp red pepper flakes .
  • 1 (15 oz) container part-skim ricotta cheese .
  • 1 lb ziti pasta or rigatoni pasta .
  • 2 egg whites .
  • 1/8 tsp ground black pepper .
  • 1 large onion, sliced .
  • 3 garlic cloves, minced .
  • 1 (28 oz) can crushed tomatoes in puree .
  • 1 tsp vegetable oil .
  • 1/3 c grated parmesan cheese .
  • 2 tsps dried Italian seasoning .
  • 2/3 c shredded part-skim mozzarella cheese .
  • 2 sweet red peppers or zucchini, sliced

Directions
  • Step #1 Preheat the oven to 325°F.
  • Step #2 Prepare the pasta according to the package directions.
  • Step #3 Drain & transfer to a 3-quart casserole dish.
  • Step #4 Meanwhile, heat the oil In a large-ish skillet over medium-low heat.
  • Step #5 Add the onion & garlic & cook for 5 mins, or until softened.
  • Step #6 Add the zucchini or sweet red pepper, red-pepper flakes, Italian seasoning, tomatoes, salt & pepper.
  • Step #7 Cover up & cook, stirring every once in awhile, for 10 mins or until the vegetables are soft.
  • Step #8 Combine the egg whites & the ricotta in a medium bowl, stir this to mix well, & spoon over the pasta.
  • Step #9 Top with the vegetable mixture & sprinkle with the mozzarella & Parmesan.
  • Step #10 Bake for 45 mins, until the top is golden brown.
