Broccoli Rice Bake Recipe

Ingredients
  • 2 c uncooked instant brown rice .
  • 1 (10 3/4 oz) can condensed cream of broccoli soup .
  • 1/2 c Bisquick baking mix .
  • 1 (14 1/2 oz) can vegetable broth .
  • 1 1/2 lbs broccoli, cut into bite sized pieces .
  • 1/4 tsp pepper .
  • 1 (2 oz) jar sliced pimentos, drained .
  • 2 tbsps firm butter or margarine

Directions
  • Step #1 Heat oven to 425.
  • Step #2 Heat 1 inch water to boiling in 2-quart saucepan; add broccoli.
  • Step #3 Heat to boiling; reduce heat to medium.
  • Step #4 Cover up & cook about 5 mins or until crisp-tender; drain.
  • Step #5 Mix broccoli, rice, broth, soup, pimientos & pepper in 2-quart casserole.
  • Step #6 Cover up & bake 20 mins.
  • Step #7 Cut margarine into baking mix, using pastry mixer, until crumbly.
  • Step #8 Sprinkle top crumbly mixture over broccoli mixture.
  • Step #9 Bake uncovered 8 to 10 mins or until top is light brown.
