Rye Swirl Bread Recipe

Ingredients
  • 2 tbsps molasses .
  • 3 c medium rye flour .
  • 4 1/2 tsps yeast (2 pkgs) .
  • 4 1/2-5 c flour .
  • 2 tbsps sugar .
  • 1 1/4 c water .
  • 2 tbsps butter .
  • 1 1/2 tsps salt .
  • 1 c milk

Directions
  • Step #1 In a large bowl, mix 2 1/2 c white flour, sugar, yeast & salt.
  • Step #2 Heat water, milk & butter till very warm.
  • Step #3 Add to dry ingredients & beat 2 mins at medium speed, scraping bowl every once in awhile.
  • Step #4 Beat 2 mins at high speed.
  • Step #5 Remove half of the batter to a separate bowl.
  • Step #6 Into one bowl, stir enough white flour to make a soft dough.
  • Step #7 Into the second bowl, stir molasses & enough rye flour to make a soft dough.
  • Step #8 Separately knead each dough till smooth, about 5 mins.
  • Step #9 Cover up each dough, let rest 10-20 mins.
  • Step #10 Divide each dough in half; roll each into a 7 x 14 inch rectangle.
  • Step #11 Place one dark rectangle on top of each white rectangle.
  • Step #12 Roll up tightly, jelly-roll fasion; pinch seams to seal.
  • Step #13 Place loaves, seam side down, in two greased loaf pans (I used my baking stone).
  • Step #14 Cover up, let rise 60 mins (less if using rapid rise yeast).
  • Step #15 Bake at 375 for 25-35 mins or till done.
  • Step #16 Remove from pans & cool on wire racks.
